Watermelon feta salad.

  • Watermelon (1 cup)

  • Baby Grape Tomatoes (1/2 cup)

  • Feta Cheese

  • Pistachios (Shelled)

  • Mint (3-4 leaves)

  • Raspberry Vinaigrette

Instructions –

Chop 1 cup of Watermelon into cubes and place into large salad bowl. Wash baby tomatoes and ½ cup to your bowl with watermelon. Add ½ cup of pistachios and stir all ingredients together. Next, add ¼ - ½ cup of feta cheese. Finely chop 4 mint leaves and sprinkle onto the top of you bowl of ingredients. Mix everything together in your bowl. After mixing, pour raspberry vinaigrette on top of your ingredients and mix well. All of the flavors come together & Viola! You have a fresh refreshing healthy summer snack – designed to keep you hydrated, nourished, and cool!
